Pumpkin Surprise Pound Cake

    Ingredients (double to make two pound cakes for recipe)

    • 2 cups (4 sticks) unsalted butter, room temperature, plus more for pan
    • 3 cups all-purpose flour, plus more for pan
    • 1 teaspoon kosher salt
    • ½ teaspoon cream of tartar
    • ¼ teaspoon ground cardamom
    • 2 cups superfine sugar
    • 6 large eggs
    • ½ cup heavy cream
    • 1 teaspoon vanilla extract
    • For orange cake only: a few drops orange food coloring (or mix of red and yellow)

    Preheat

    Preheat the oven to 350*F.

    Assemble

    Grease 9” by 5” loaf pan with butter and coat with flour, tap out any excess.

    Whisk

     3 mins

    Whisk 1 tsp salt, 1/2 tsp cream of tartar, 1/4 tsp ground cardamom, and 3 cups flour in a medium bowl, set aside.

    Mix

     5 mins

    Use an electric mixer on high speed to beat 2 cups room temperature butter until light and fluffy (about 5 minutes).

    Add

     8 mins

    Reduce mixer speed to low and gradually add in 2 cups of superfine sugar. Once all sugar is added, increase mixer speed to high and beat until light and creamy (about 6-8 minutes longer)

    Beat

    Add 6 eggs, one at a time, beating to combine after each egg is added.

    Beat in ½ cup heavy cream and 1 teaspoon vanilla extract.

    Reduce your mixer speed to low and gradually add previously combined dry ingredient mix. Mix until mostly combined.

    Add food coloring to achieve desired shade of orange and finish mixing with a rubber spatula until combined. Scrape the batter into the prepared pan.

    Bake

     70-80 mins

    Bake for 70-80 minutes at 350*F, rotating halfway through until top is golden brown and a tester inserted into the center comes out clean. Transfer baked cake to a wire rack and let cool completely before turning out.

    11.

    Prep

     30 mins

    While waiting for the orange cake to cool, follow directions to make a second batch of pound cake batter without the orange food coloring and set the no batter aside (do not bake yet). Slice the cooled orange cake.

    Pour

     3 mins

    Pour the batter over the pumpkin cutouts. Be careful not to overfill the pan (you may have leftover batter).

    Bake

     70-80 mins

    Bake at 350*F for 70-80 minutes.

    Stir cooked pumpkin pie in a large bowl until mostly smooth except for bits of pie crust.

    Form pumpkin mixture into balls and transfer to a baking sheet.

    Chill pumpkin for at least 30 minutes in the freezer (for 1 hour if possible).

    Melt

    Melt chocolate candy melts according to package instructions.

    • 10 oz blackberry jam (or your preferred jam or pie filling)

    Assemble mason jar lids to create pie tins.

    Place one circle of pie crust in the bottom of each mason jar lid.

    Spoon

    Spoon 2 tbsp of blackberry jam onto each crust.

    Use a cookie cutter to cut decorative leaves from the remaining pie crust to decorate each pie (you can also use the mason jar lid to cut another circle to top the pie, just be sure to cut vent holes in the top crust before baking). Cover filling with pie crust leaves.
