Cinnamon Roll Crust

  • 1 tube store-bought cinnamon roll dough
  • 2 store-bought pie crusts

Bottom Layer: Pecan Filling

  • 2 tbsp. butter
  • 1 cup pecans, roughly chopped
  • 2 tbsp. brown sugar
  • ¼ cup corn syrup
  • ½ tsp. vanilla extract
  • 1 egg
  • pinch of salt

Middle Layer: Apple Pie Filling

  • 2 tbsp. butter
  • 3 Granny Smith apples, peeled, cored, and diced
  • ⅓ cup sugar
  • ½ tsp. cinnamon
  • pinch of salt
  • 1 tbsp. flour

Top Layer: Pumpkin Pie Filling

  • ¾ cup pumpkin puree
  • ¼ cup evaporated milk
  • ½ tsp. pumpkin pie spice
  • ⅓ cup sugar
  • pinch of salt
  • 1 egg

Preheat

Preheat your oven to 375*F.

Roll

 2 mins

Remove cinnamon rolls from the tube and roll out using a rolling pin until they form your pie “crust.” Line your pie tin with it. Bake for 8 minutes at 375*F. Let cool.

Combine

 10 mins

For the pecan pie filling: In a large bowl, combine 1 cup roughly chopped pecans, 1/4 cup corn syrup, 2 tbsp brown sugar, 1/2 tsp vanilla extract, 2 tbsp melted butter, 1 egg, and a pinch of salt. Mix together and set aside.

Combine

For the apple pie filling: In a large bowl, combine 3 cored and sliced Granny Smith apples, 1/3 cup sugar, 1 tbsp flour, 2 tbsp melted butter, 1/2 tsp cinnamon, and a pinch of salt. Mix together and set aside.

Combine

For the pumpkin pie filling: In a large bowl, combine 3/4 cup pumpkin puree, 1/3 cup sugar, 1/4 cup evaporated milk, 1 egg, 1/2 tsp pumpkin pie spice, and a pinch of salt. Mix together and set aside.

Pour

Pour the pecan pie filling into the bottom of the pie tin with the cinnamon roll crust. Spread evenly. Cut a store-bought pie crust to size and place on top of the pecan pie filling.

Pour

Pour the apple pie filling into the same pie tin. Spread evenly. Cut a store-bought pie crust to size and place on top of the apple pie filling.

Pour

Pour the pumpkin pie filling into the same pie tin. Spread evenly. Optional: garnish and decorate with pecans.

Bake

 30-40 mins

Bake at 375*F for 30-40 minutes or until golden brown. Wait until the pie is cooled completely before serving. Enjoy!
